Banana-berry breakfast biscuits

Start your day right with delicious, crispy breakfast biscuits. Make a large batch to store in the freezer for convenience.
Ingredients:
  • 250.00 gm traditional rolled oats
  • 125.00 ml slivered almonds
  • 195.00 gm mashed banana (see notes)
  • 125.00 ml almond spread
  • 115.00 gm vegetable oil
  • 111.38 gm maple flavoured syrup
  • 8.80 gm vanilla extract
  • 1.25 gm mixed spice
  • 250.00 ml frozen blackberries
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line 2 baking trays with baking paper.
  • Set aside 1 tablespoon each of the oats and almonds for later. Combine the rest of the oats and almonds, along with the banana, almond spread, oil, maple syrup, vanilla, and mixed spice in a large bowl. Mix until well combined, then gently fold in the blackberries.
  • Spoon 1/4 cup of mixture onto prepared trays, keeping them 4cm apart. Sprinkle with the reserved oats and almonds. Bake for 25 minutes until golden and firm. Allow to sit for 10 minutes before transferring to a wire rack to cool. Serve as directed in the notes.
