Traditional Welsh tea bread, moist and rich with dried fruit, delicious when thickly sliced with butter.
Ingredients:
  • 1 cup hot brewed tea
  • 0.75 cup dried currants
  • 0.75 cup golden raisins
  • 0.75 cup demerara sugar
  • 1.25 cups self-rising flour
  • 1 egg, beaten
Instructions:
  • Pour fragrant hot tea over a mixture of currants and raisins in a bowl and let it soak for 8 hours to overnight for the flavors to meld beautifully.
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 2-pound loaf pan by greasing and lining it.
  • Mix demerara sugar into the tea and fruit mixture until fully dissolved, then blend in the flour and egg until a smooth batter forms. Spread the batter evenly in the prepared pan.
  • Bake in a preheated oven for 40 minutes, or until golden-brown and a toothpick inserted into the center comes out clean. Let it cool briefly in the pan before transferring to a rack to cool completely.
