Cheesy, creamy chicken stuffed potatoes - a quick and tasty dinner in 20 minutes!
Ingredients:
  • 4 baking potatoes (1 1/2 lb)
  • 1/2 cup fat-free sour cream
  • 3 medium green onions, finely chopped (3 tablespoons)
  • 1 1/3 cups refrigerated shredded fully cooked chicken in barbecue sauce
  • 1/2 cup shredded reduced-fat extra-sharp Cheddar cheese (2 oz)
Instructions:
  • Pierce potatoes with a fork and arrange them in a circle on a microwave-safe plate lined with paper towels. Microwave on High for 5 minutes, then flip the potatoes over and microwave for an additional 5 minutes or until they are tender when pierced in the center with a fork.
  • Combine sour cream and 2 tablespoons of onions in a small bowl; set aside.
  • Place the chicken in a microwave-safe bowl and cover it with plastic wrap, making sure the food does not touch the wrap. Microwave on High for 2 minutes or until fully heated.
  • Fluff opened potatoes with a fork and top with chicken, sour cream mixture, cheese, and remaining 1 tablespoon of onions.
