Fire up the grill for a show-stopping roast scotch fillet dinner that will impress everyone.
Ingredients:
  • 18.20 gm olive oil
  • 2 tsp ground mixed peppercorns
  • 23.40 gm wholegrain mustard
  • 2 tsp chopped fresh thyme leaves
  • 423.75 gm barbecue sauce (see related recipe)
  • 1.4kg piece beef scotch fillet
Instructions:
  • Preheat the barbecue to high with the hood closed. Secure the beef with kitchen string at 4cm intervals to maintain its shape. In a flameproof roasting pan, mix oil, pepper, mustard, thyme, and 1/2 cup of sauce. Add the beef and coat it evenly by turning it in the mixture.
  • Grill the beef on a barbecue chargrill until browned all over, then return to the pan. Baste with the reserved oil mixture, cover, and cook over low heat for 1 hour until medium or done to your preference.
  • Take out the beef, cover it with foil, let it rest for 15 minutes, slice it, and serve it with the rest of the barbecue sauce.
