Fire up the grill for a showstopping roast scotch fillet that will leave your guests raving.
Ingredients:
  • 18.20 gm olive oil
  • 2 tsp ground mixed peppercorns
  • 23.40 gm wholegrain mustard
  • 2 tsp chopped fresh thyme leaves
  • 423.75 gm barbecue sauce (see related recipe)
  • 1.4kg piece beef scotch fillet
Instructions:
  • Preheat the barbecue on high with the hood closed. Secure beef with kitchen string at 4cm intervals to retain its shape while cooking. Mix oil, pepper, mustard, thyme, and 1/2 cup sauce in a flameproof roasting pan, then add the beef and coat it evenly.
  • Grill beef over charcoal, flipping occasionally, until nicely browned, about 5 minutes. Put the beef back in the pan, brush with the reserved oil mixture, cover, and simmer on low heat for 1 hour until it reaches your preferred level of doneness.
  • Take out the beef. Wrap it with foil and let it sit for 15 minutes. Cut into slices and serve with the rest of the barbecue sauce.
