Quick and easy chicken with mango salad – only 6 ingredients!
Ingredients:
  • 1 large mango, peeled, cut into 1.5cm cubes
  • 1 long red chilli, deseeded, finely chopped
  • 1/2 red onion, finely chopped
  • 125.00 ml chopped fresh coriander leaves
  • 42.00 gm lime juice
  • 4 (110g each) chicken thigh fillets, trimmed, halved
Instructions:
  • Combine mango, chili, onion, and coriander in a bowl. Drizzle with half of the lime juice and toss together.
  • Preheat a greased barbecue plate or chargrill over medium-high heat. Marinate chicken in lime juice, season with salt and pepper, then grill for 6 to 7 minutes on each side until fully cooked. Serve with mango mixture.
