Elevate your chicken drumsticks with a delicious mango glaze for a tropical flair.
Ingredients:
  • 1 large mango, roughly chopped
  • 44.00 gm sweet chilli sauce
  • 2 tsp Squid fish sauce
  • 1 garlic clove, crushed
  • 20.00 ml chopped fresh coriander leaves
  • 8 (125g each) chicken drumsticks
  • 4 medium desiree potatoes
  • 18.20 gm olive oil
  • Mixed salad leaves, to serve
  • Sweet chilli sauce, extra, to serve
Instructions:
  • Combine mango, sauces, garlic, 1 tablespoon lemon juice, and coriander in a food processor and blend until smooth. Transfer the mixture to a glass or ceramic shallow dish. Add chicken, ensuring it is well coated. Cover and refrigerate overnight.
  • Boil potatoes until tender, then drain and let them cool. Slice them thickly.
  • Preheat a greased barbecue plate with hood and chargrill over medium heat. Remove chicken from marinade, shake off excess, and place on the barbecue. Close the hood and cook for 10-12 minutes, turning and brushing with marinade periodically, until chicken is fully cooked.
  • In a medium bowl, mix together potatoes and oil. Transfer the potatoes to a barbecue chargrill. Cook for 6 to 8 minutes, flipping occasionally until they are nicely browned. Place the cooked potatoes in a bowl, drizzle with the remaining lemon juice, season with salt and pepper, and toss gently to combine.
  • Plate the potato mixture alongside the chicken drumsticks, mixed salad leaves, extra sweet chili sauce, and lemon wedges.
