Mango glazed fresh Atlantic salmon

Elevate your salmon with a tangy mango glaze for a taste of the tropics that will wow everyone.
Ingredients:
  • 187.50 ml Italian white wine vinegar
  • 28.60 gm honey
  • 20.00 ml ginger, finely chopped
  • 1 mango, peeled, pitted and cut into large chunks
  • 21.00 gm lime juice
  • 5.30 gm soy sauce
  • 30.00 ml coriander, chopped finely
  • 8 x 170g Tasmanian Atlantic salmon fillets, skin removed
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a medium saucepan over medium heat, combine vinegar and honey. Cook until honey has dissolved and the mixture has slightly thickened, approximately 2 minutes.
  • Stir in fragrant ginger and sweet mango. Let the mixture gently simmer until tender, about 5-7 minutes.
  • Transfer the hot mixture to a blender and blend until smooth. Let it cool down, then add lime juice, soy sauce, and coriander, and mix well.
  • Preheat the grill on high and cover a medium baking tray with foil.
  • Heat olive oil in a large sauté pan over high heat.
  • Season the salmon generously with salt and pepper. Sear the salmon in a hot pan, flesh side down, until golden brown for about 15 seconds. Flip the salmon over to sear the other side for an additional 10 seconds.
  • Place the salmon, flesh side up, on a foil-lined baking tray and generously coat it with the delicious mango glaze.
  • Place the tray with the salmon under the grill in the oven and cook for about 5 minutes, or until the salmon is just cooked and the glaze begins to brown. Move the salmon onto a plate and allow it to rest for 2 minutes before serving.
  • Transfer the beautifully cooked fish to a platter, embrace the aroma, and serve it elegantly with delicious sides.
