Elevate chicken, fish, or pork with a zesty, fruity glaze for a flavorful twist when grilling or baking.
Ingredients:
  • 1.5 cups rice wine vinegar
  • 0.5 cup raw sugar
  • 2 ripe mangoes, peeled and chopped
  • 4 fresh apricots, pitted and chopped
  • 1 tablespoon chopped fresh ginger root
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
Instructions:
  • In a saucepan, combine rice vinegar and sugar, then bring to a boil until sugar dissolves. Cook over medium heat for 10 minutes, stirring constantly. Add mangoes, apricots, and ginger; cook until fruit is soft, about 10 more minutes. Transfer to a blender, add honey and lime juice, and process until smooth.
