Barbecued corn with paprika spiced butter

Elevate your barbecue with irresistible grilled corn on the cob.
Ingredients:
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 125g butter, softened
  • 5.00 gm smoked paprika
  • 1 long red chilli, seeded, finely chopped
  • 125.00 ml finely chopped coriander
  • 2 tsp finely grated lime rind
  • 6 corn cobs, husks and silks removed
  • 18.20 gm olive oil
Instructions:
  • Preheat grill to medium heat.
  • Heat a small frying pan over medium heat. Cook cumin and coriander seeds for 1 minute until aromatic. Transfer to a mortar and crush with a pestle. Transfer to a small bowl and combine with butter, paprika, chili, fresh coriander, and lime rind. Season with salt and pepper. Spoon onto baking paper, form a log, and chill in the fridge for 20 minutes until firm.
  • Brush a delicate coat of oil onto the corn and grill it, turning occasionally, for 10 minutes until tender and subtly charred. Serve in a dish.
  • Slice the butter thinly. Arrange the butter slices on top of the corn and serve right away.
