Barbecued fish with warm tomato salad

Boost Omega-3 with quick and delicious grilled fish meal.
Ingredients:
  • 800g kingfish
  • 2 punnets cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • Olive oil cooking spray
  • 82.50 ml fresh chervil leaves (see note)
  • 18.20 gm extra virgin olive oil
  • Mixed salad leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Coat fish, tomatoes, and onion with a light mist of oil. Sprinkle with salt and pepper. Let sit for 5 minutes.
  • Preheat barbecue plate on medium-high heat until hot. Cook fish for 3 to 4 minutes on each side until fully cooked. Transfer to a plate, cover, and keep warm.
  • Turn up the heat to high. Sauté the onion and tomatoes for 1 to 2 minutes until warmed through. Mix in the chervil and oil, then season with salt and pepper.
  • Present the fish alongside a comforting tomato salad, a medley of mixed salad leaves, and a side of fresh lemon wedges.
