Fish with warm fennel salad

Fish salad: quick, easy, and delicious with just 6 ingredients.
Ingredients:
  • 2 medium lemons
  • 27.30 gm olive oil
  • 250g fennel
  • 1 small red onion, thinly sliced
  • 200g grape tomatoes, halved
  • 420g can cannellini beans, drained, rinsed
  • 4 (175g each) john dory fish fillets (see note)
Instructions:
  • Juice one lemon and cut the remaining lemon into wedges. In a frying pan over medium-high heat, heat a tablespoon of oil. Add fennel and onion, stirring and cooking for 2 minutes until just softened. Transfer to a bowl and mix in tomato, beans, 2 tablespoons of lemon juice, and reserved fronds. Season with salt and pepper.
  • Generously coat fish with the remaining oil and season with salt and pepper. Grill on a greased barbecue plate or chargrill over medium heat for 3 to 4 minutes per side until fully cooked. Serve with fennel mixture and lemon wedges.
