Enhance fish with vibrant yellow hue and hint of warm pepperiness using turmeric.
Ingredients:
  • 18.20 gm light olive oil
  • 12.20 gm fish sauce
  • 2 garlic cloves, finely chopped
  • 40.00 ml chopped fresh dill
  • 1/2 tsp turmeric
  • 500g firm white fish fillets, cut into 4cm pieces
  • 4 pita breads
  • Small English spinach leaves, to serve
  • Fresh dill sprigs, to serve
  • 5 truss tomatoes, coarsely chopped
  • 1/2 brown onion, coarsely chopped
  • 2 tsp finely chopped ginger
  • 60ml (1/4 cup) apple cider vinegar
  • Pinch dried chilli flakes, optional
Instructions:
  • In a glass bowl, mix together the oil, fish sauce, garlic, chopped dill, turmeric, and a generous amount of black pepper. Add the fish and evenly coat it. Cover the bowl and refrigerate for 1 hour to let the flavors meld.
  • In a saucepan over high heat, cook tomato, onion, ginger, sugar, vinegar, and chili. Bring to a simmer, then reduce heat to medium. Cook for 35 minutes, stirring occasionally, until it thickens into jam-like consistency.
  • Preheat a large non-stick frying pan over high heat. Carefully add the fish mixture and cook for 5 minutes, turning gently, until fully cooked.
  • Heat the bread according to the package instructions, then layer with fresh spinach and fish. Finish by drizzling with flavorful tomato jam and garnishing with fragrant dill sprigs.
