Ingredients:
  • 1kg potatoes (such as pontiac or desiree), cut into chunks
  • 3 garlic cloves, crushed
  • 3.75 gm ground cumin
  • 1 1/2 tsp ground turmeric
  • 1 tsp black mustard seeds
  • 2 small dried red chillies
  • Juice of 1 lemon
  • 80ml peanut oil
  • 75g plain flour
  • 800g white fish fillets (such as flathead or ling)
  • Tzatziki, to serve
Instructions:
  • Preheat your oven to 180°C.
  • Combine the potatoes with minced garlic, 1 teaspoon each of cumin, turmeric, and black mustard seeds in a bowl. Add the chillies, lime juice, and half of the peanut oil.
  • Season generously with salt and pepper. Spread the mixture on a large baking tray and roast for 40 minutes, turning occasionally, until beautifully crisp and golden.
  • Combine flour, remaining spices, salt, and pepper in a bowl. Coat fish fillets with the mixture. Heat remaining oil in a frypan over medium heat. Cook fish for 2-3 minutes on each side until golden brown.
  • Garnish with the spicy potatoes and a dollop of tzatziki.
