Quick and flavorful turmeric fish with jasmine rice and sambal beans in 30 minutes!
Ingredients:
  • 2 long red chillies, seeded, finely chopped
  • 1.20 gm salt
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 1 lime, rind finely grated, juiced
  • 20.00 gm caster sugar
  • 20.00 ml white vinegar
  • 3.75 gm ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 18.20 gm peanut oil
  • 4 (about 150g each) firm white fish fillets
  • 300g green beans, trimmed
  • 200g snow peas or sugar snap peas, trimmed
  • 125.00 ml coriander leaves
  • Steamed jasmine rice, to serve
Instructions:
  • Combine crushed chili and salt in a mortar, pound with a pestle until finely crushed. Alternatively, use a bowl and the end of a rolling pin to crush. Add ginger, garlic, lime rind, lime juice, sugar, and vinegar, mix well.
  • In a large bowl, mix cumin, turmeric, coriander, and half of the oil. Add the fish and coat evenly. Season with salt and pepper.
  • Preheat a large frying pan over high heat and sear the fish for 2-3 minutes on each side until beautifully golden and perfectly cooked.
  • Heat the remaining oil in a wok over high heat until sizzling. Stir in the beans, peas, and chili mixture, stir-frying for 3-4 minutes until the beans are tender-crisp. Take off the heat and mix in the fresh coriander leaves.
  • Plate the fish and bean mixture evenly among serving plates, and enjoy with a side of rice.
