Lentils elevate weeknight meals with their rich, nutty flavor.
Ingredients:
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 200g basmati rice
  • 375ml vegetable stock
  • 42.00 gm lemon juice
  • 100g green beans, chopped
  • 400g can lentils, rinsed, drained
  • 1 1/2 tsp ground turmeric
  • 3.75 gm ground cumin
  • 1/2 tsp chilli flakes
  • 8 (about 800g) white fish fillets (such as bream or whiting)
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan over medium heat, heat half of the oil. Sauté the onion and garlic for about 5 minutes until the onion softens. Stir in the rice until coated. Pour in the stock and lemon juice and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes until the liquid is absorbed and rice is tender. Stir in the beans and lentils with a fork. Cover and let sit for 5 minutes before serving.
  • In a large bowl, mix together turmeric, cumin, chili, and the remaining oil. Season with salt and pepper. Add the fish fillets and toss to coat evenly in the spice mixture.
  • Preheat a large non-stick frying pan over high heat. Add the fish and sear for 1-2 minutes on each side until perfectly cooked. Take off the heat.
  • Divide the rice evenly among plates. Place the fish on top and serve right away with optional lemon wedges.
