Make flavorful Indian lentil dahl with turmeric and garam masala. Add spinach and coconut milk for extra richness. Ideal with rice and curry.
Ingredients:
  • 1.5 cups red lentils
  • 3.5 cups water
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon chili powder
  • 1 pound spinach, rinsed and chopped
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 teaspoon mustard seed
  • 1 teaspoon garam masala
  • 0.5 cup coconut milk
Instructions:
  • Give the lentils a quick rinse and let them soak for 20 minutes.
  • Bring water to a boil in a large saucepan. Stir in salt, lentils, turmeric, and chili powder. Cover, bring back to a boil, then simmer on low heat for 15 minutes. Add spinach and cook for an additional 5 minutes until lentils are soft. Adjust consistency by adding more water if needed.
  • In a small saucepan over medium heat, melt butter and saute onions with cumin and mustard seeds until onions are transparent. Add lentils, garam masala, and coconut milk. Cook until heated through, stirring often.
