Lentil Rice and Veggie Bake

Create a mouthwatering vegan lentil bake with rice, tomato sauce, herbs, and veggies. Perfect for everyone to savor.
Ingredients:
  • 0.5 cup uncooked long grain white rice
  • 2.5 cups water
  • 1 cup red lentils
  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 fresh tomato, chopped
  • 0.33333334326744 cup chopped celery
  • 0.33333334326744 cup chopped carrots
  • 0.33333334326744 cup chopped zucchini
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • salt and pepper to taste
Instructions:
  • In a pot, simmer rice with 1 cup of water until tender. In another pot, boil lentils with 1 1/2 cups of water until they are tender.
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • In a skillet over medium heat, sauté onion and garlic in oil. Add tomato, celery, carrots, zucchini, and half of the tomato sauce. Sprinkle half of the basil, oregano, and cumin, then season with salt and pepper. Cook until vegetables are tender.
  • Combine rice, lentils, and vegetables in a casserole dish. Drizzle remaining tomato sauce over the top and generously sprinkle with the remaining basil, oregano, and cumin.
  • Bake in the preheated oven until golden and bubbly, about 30 minutes.
