Lentil & rice salad with caramelised onions

SunRice and taste.com.au present a delicious vegetarian Lentil & Rice Salad with caramelized onions.
Ingredients:
  • 300g lentils
  • 113.75 gm extra-virgin olive oil
  • 2 brown onions, thinly sliced
  • 36.00 gm tahini
  • 31.50 gm lemon juice
  • 1 garlic clove, crushed
  • 6 radishes, thinly sliced
  • 250.00 ml coarsely chopped flat-leaf parsley, plus extra leaves to serve
  • 40.00 ml pine nuts, toasted
Instructions:
  • Prepare the SunRice brown rice and lentils according to the package instructions. Allow to cool completely before using.
  • Heat 2 tablespoons of oil in a large frying pan over medium-high heat. Cook the onion, stirring occasionally, for 10 minutes until softened. Reduce heat to medium and continue cooking for another 5 minutes until caramelized. Set aside on a paper towel-lined plate.
  • In a large bowl, blend the leftover oil, tahini, lemon juice, garlic, and 1 1/2 tablespoons of water until well mixed. Season with salt and pepper. Mix in the cooled rice, radish, and chopped parsley. Serve on a plate and garnish with onion, pine nuts, and additional parsley leaves.
