Satisfying lentil and vegetable salad - a hearty, healthy meal for any appetite.
Ingredients:
  • 200.00 gm brown rice
  • 250.00 ml dried green lentils, rinsed
  • 300g chorizo sausages, thinly sliced (see note)
  • 75.08 gm olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 5.00 gm mild curry powder
  • 40.00 ml white wine vinegar
  • 1 red capsicum, finely diced
  • 310g can corn kernels, drained, rinsed
  • 2 green onions, thinly sliced
Instructions:
  • Bring a large saucepan of water to a boil, then add rice and lentils. Simmer over medium heat, uncovered, for 30 to 35 minutes until both are tender. Drain and rinse with cold water.
  • Heat up a large frying pan over medium heat. Add the chorizo and cook while stirring for about 5 minutes or until it turns a beautiful golden brown color. Transfer the chorizo to a bowl.
  • Heat 2 tablespoons of oil in a small frying pan over medium heat. Sauté onion and garlic for about 3 minutes until soft. Stir in curry powder for 1 minute until fragrant. Remove from heat and mix in the remaining oil, vinegar, and season with salt.
  • In a large bowl, mix together rice, lentils, capsicum, corn, green onion, chorizo, and onion mixture. Toss well to combine. Serve.
