Curried brown rice, veggies, and feta stuffed acorn squash - a cozy and flavorful side dish for any occasion.
Ingredients:
  • 2 acorn squash, halved and seeded
  • 1 tablespoon olive oil, or as needed
  • 0.5 cup diced red bell pepper
  • 0.5 cup sliced daikon radish
  • 0.25 cup sliced leek
  • 0.25 cup diced celery
  • 1 jalapeno pepper, diced
  • 1 tablespoon minced garlic
  • 2 cups vegetable stock
  • 1 cup brown rice
  • 1 cup chopped collard greens
  • 1 tablespoon curry powder
  • 1.5 teaspoons red curry paste
  • 0.25 cup chopped walnuts
  • 0.5 cup crumbled feta cheese
Instructions:
  • Cover each half of the squash with a layer of plastic wrap.
  • Microwave the wrapped squash cut side down on high until tender, for 12 to 15 minutes. Keep the squash wrapped while you work on the filling.
  • In a large skillet over medium heat, sauté red bell pepper, radish, leek, celery, jalapeno pepper, and garlic in olive oil until softened, around 10 minutes. Add vegetable stock and rice, mix well. Simmer covered until rice is tender and broth is absorbed, approximately 45 minutes.
  • Gently scatter greens over the rice mixture, allowing them to wilt for about 5 minutes while covered. Add curry powder, curry paste, and walnuts to the rice mixture, and stir until well combined.
  • Place the unwrapped squash halves, cut sides up, into 4 soup bowls. Fill each squash half with about 2 tablespoons of feta cheese. Then, add a generous scoop of rice mixture on top of the feta layer. Finish by sprinkling any remaining feta on top of the rice layer.
