Elevate your meals with tender pork ribs paired with vibrant mango salsa and fluffy steamed rice.
Ingredients:
  • 1 long green chilli, finely chopped
  • 1 tsp ground allspice
  • 2 garlic cloves, crushed
  • 20.00 ml white vinegar
  • 2 tsp thyme leaves
  • Pinch of ground nutmeg
  • Pinch of ground cloves
  • 36.40 gm peanut oil
  • 6 Pork Spare Ribs, halved
  • 2 mangoes, chopped
  • 1 red onion, finely chopped
  • 1 long red chilli, finely chopped
  • 125.00 ml coriander, chopped
  • 42.00 gm lime juice
  • Steamed long grain rice, to serve
Instructions:
  • Heat up the barbecue or chargrill plate on high.
  • In a large bowl, mix together green chilli, allspice, garlic, vinegar, thyme, nutmeg, clove, and 1 tbsp of oil. Season the mixture, then add the pork and coat it evenly. Cook the pork on the barbecue or chargrill plate for 5 minutes on each side until fully cooked. Transfer the pork to a heatproof plate, cover, and let it rest for 5 minutes before serving.
  • In a medium bowl, mix together the mango, onion, red chili, coriander, lime juice, and the rest of the oil.
  • Present the pork alongside a bed of fluffy rice and vibrant mango salsa.
