Grill up a mouthwatering Australian BBQ lamb dish to impress your guests.
Ingredients:
  • 1kg butterflied leg of lamb
  • 82.50 gm fruit chutney
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 3 garlic cloves, crushed
Instructions:
  • In a large, shallow glass or ceramic dish, place the lamb. In a jug, combine chutney, cumin, coriander, garlic, and oil. Pour the mixture over the lamb, ensuring it's coated evenly. Cover and refrigerate for 3 hours, if possible.
  • Preheat the barbecue on high with the hood closed, then reduce the temperature to medium-low. Place the lamb in a disposable baking dish and cook on the barbecue over indirect heat for 25 minutes. Flip the lamb and continue cooking for another 20 to 25 minutes for a medium doneness or until cooked to your preference. Allow the lamb to rest, covered, for 10 minutes before slicing. Serve with Honey Pistachio Couscous.
