Indulge in irresistible BBQ pork paired with tangy guacamole for a memorable meal.
Ingredients:
  • 4 pork cutlets, rind trimmed, bones scraped (ask your butcher to do this for you)
  • 125.00 ml peri-peri marinade*
  • 1 baby cos lettuce, leaves separated (torn if large)
  • 18.20 gm olive oil
  • Lime halves, to serve
  • Flesh of 1 avocado (preferably Shepard or Fuerte varieties)
  • Juice of 1/2 lime
  • 62.50 ml roughly chopped coriander leaves
Instructions:
  • Tenderize the pork with a meat mallet until it's 2cm thick, then massage it with the marinade and let it rest for 5 minutes at room temperature.
  • For the guacamole, gently mash the avocado with a fork, then mix in the lime juice, fresh coriander, and season to your liking. In a bowl, coat the cos lettuce with half of the oil and season to taste.
  • In a large non-stick frypan over medium-high heat, heat the remaining oil. Cook the pork for 5 minutes, turning once, until cooked to your preference. Remove the pan from the heat, cover, and let the pork rest for 5 minutes. Serve with cos, guacamole, and lime halves.
