Barbecued pumpkin, red onion and spinach salad

Grill pumpkin & onion alongside meat for a delicious salad side.
Ingredients:
  • 1 (about 1.5kg) butternut pumpkin, quartered lengthways, peeled, seeded, thinly sliced
  • 60ml olive oil
  • 3 red onions, cut into wedges
  • 300g baby spinach leaves
  • 200g feta, crumbled
  • 23.40 gm wholegrain mustard
  • 40.00 ml red wine vinegar
Instructions:
  • Preheat the barbecue to medium heat. Brush the pumpkin slices with oil, season with salt and pepper, then grill for 1 minute on each side until tender. Transfer to a plate. Grill the onion on the barbecue for 2 minutes, or until softened, then remove from heat.
  • In a large serving bowl, combine the spinach, feta, pumpkin, and onion. In a screw-top jar, shake together the mustard, vinegar, and remaining oil until well combined. Drizzle the dressing over the salad and serve right away.
