Barbecued Tuscan sweet potato

Elevate your BBQ game with this delicious sweet potato side dish.
Ingredients:
  • 700g sweet potato
  • 5.00 gm Tuscan seasoning
Instructions:
  • Preheat a covered barbecue on medium-high heat with the hood closed. Layer two pieces of foil. Scrub the sweet potato, then dry it with a paper towel. Make 3 shallow cuts into the sweet potato and place it on the foil.
  • In a bowl, mix oil and seasoning. Drizzle over sweet potato, massaging into slits. Wrap tightly in foil and place in baking tray. Barbecue with hood down over indirect heat for 1 hour, turning occasionally, until tender. Rest for 5 minutes, then slice and serve.
