Quick and easy family favorite: Roasted salmon with homemade BBQ sauce.
Ingredients:
  • 3 (6 ounce) salmon fillets
  • 0.25 cup lemon juice
  • cooking spray
  • 2 tablespoons chili powder
  • 4 teaspoons lemon zest
  • 1.5 teaspoons ground cumin
  • 1.25 teaspoons ground cinnamon
Instructions:
  • Marinate salmon in a resealable bag with lemon juice in the refrigerator for a minimum of 1 hour.
  • Preheat your oven to 400 degrees F (200 degrees C). Prepare a baking dish by lining it with aluminum foil and spraying the foil with cooking spray.
  • Combine brown sugar, chili powder, lemon zest, oil, cumin, cinnamon, and salt in a blender and blend until smooth.
  • Take out the salmon from the bag and dispose of the bag and lemon juice. Coat the salmon with the brown sugar mixture and transfer it to the baking dish.
  • Cook the fish in the preheated oven until it easily flakes with a fork, which should take about 12 to 15 minutes.
