Barbeque or oven-roasted tender lamb stuffed with Moroccan spiced cauliflower and chickpeas - a family favorite!
Ingredients:
  • 125g can chickpeas, rinsed, drained
  • 20.00 ml Moroccan seasoning
  • 100g cauliflower florets
  • 40.00 ml chopped pistachios
  • 40.00 ml chopped flat-leaf parsley
  • 1.2kg Lamb Boneless Leg Roast
  • 500ml chicken stock
  • 250g pearl couscous
  • 250.00 ml flat-leaf parsley leaves
  • 125.00 ml mint leaves
  • 62.50 ml basil leaves
  • 1 lemon, zested, juiced
  • 36.40 gm extra virgin olive oil
Instructions:
  • Combine chickpeas, fragrant Moroccan seasoning, and fresh cauliflower in a food processor. Blend until the mixture is just combined. Then, transfer the mixture to a bowl and gently fold in the crunchy pistachios and flavorful chopped parsley.
  • Lay the lamb flat on a tidy work surface. Undo the string and spread out the lamb. Spread the chickpea mixture along the middle of the lamb. Roll up the lamb to wrap the filling inside and fasten with kitchen string to hold it together.
  • Preheat a covered barbecue on medium heat or preheat oven to 180C. Grill the lamb for 5 minutes on each side until browned. Transfer the lamb to a roasting pan. Cook using indirect heat in the covered barbecue for 40-45 minutes for medium doneness, or to your liking. Alternatively, bake in the oven for 40-45 minutes until cooked as desired. Rest the lamb for 10 minutes covered with foil before serving.
  • In a saucepan, bring the stock to a boil. Stir in the couscous, reduce heat, cover, and simmer for 8 mins until tender. Let it sit covered for 5 mins, then fluff with a fork.
  • Chop half of the parsley, mint, and basil leaves and mix them with the couscous, lemon zest, lemon juice, and oil. Season with salt and pepper, then add the rest of the herbs and gently stir to combine.
  • Slice the succulent lamb and present it alongside the flavorful couscous medley.
