Rum-infused grilled pineapple served with ice cream.
Ingredients:
  • 1 fresh pineapple
  • 0.25 cup rum
  • 0.25 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
Instructions:
  • Peel the pineapple, remove the core, and slice it into 8 rings. Place the rings in a dish or bag. Combine rum, brown sugar, cinnamon, ginger, nutmeg, and cloves in a bowl. Pour the mixture over the pineapple, cover, and refrigerate for at least 1 hour, or overnight.
  • Preheat the grill until it's piping hot and lightly oil the grate.
  • Grill pineapple rings for 15 minutes, turning once, until the outside is dry and charred. Serve with extra marinade.
