Barbecued ham and pineapple with spicy potatoes

Create a budget-friendly, healthy BBQ ham dinner with just a few simple ingredients.
Ingredients:
  • 4 large desiree potatoes, sliced lengthways
  • Olive oil cooking spray
  • 1 large lime, rind grated, juiced
  • 125.00 ml coriander leaves
  • 1 long red chilli, deseeded, finely chopped
  • 4 ham steaks
  • 1 small pineapple, peeled, cut into 1cm-thick slices
Instructions:
  • Lay out half of the potatoes evenly on a large microwave-safe plate and cover with plastic wrap. Microwave on HIGH (100%) for 3 minutes, or until the potatoes are just tender. Drain and repeat with the remaining potatoes.
  • 1. Heat up the barbecue grill until sizzling hot. Spray olive oil on both sides of the potato slices. Grill them for 2 minutes on each side until they turn golden and crispy. 2. Transfer the potato slices to a big bowl. Sprinkle lime zest, squeeze 2 tablespoons of lime juice, add coriander and chili. Season with salt and pepper. Mix everything together thoroughly. Cover and enjoy!
  • Drizzle ham and pineapple with oil, then sprinkle with salt and pepper. Grill for 2 to 3 minutes on each side until ham is heated and pineapple caramelizes. Serve with spicy potatoes.
