Creamy polenta infused with delicate Parmesan cheese, perfect as a side dish or sliced, fried, or grilled for a delightful treat.
Ingredients:
  • 1 cup cornmeal
  • 1 cup cold water
  • 3 cups boiling water
  • 1 cup grated Parmesan cheese
Instructions:
  • Mix cornmeal, cold water, and salt in a mixing bowl until well combined. Grease a loaf pan.
  • Bring the last 3 cups of water to a vigorous boil and mix in the cornmeal. Return the mixture to a boil, stirring constantly. Lower the heat to a simmer and fold in the cheese.
  • Simmer the mixture for 20 to 30 minutes, stirring often, until the polenta is very thick. Pour the thickened mixture into a loaf pan and chill for at least 4 hours before serving.
