Deliciously simple Christmas cake made with fruit mince prepared a week in advance.
Ingredients:
  • 185g butter, melted
  • 3 eggs, lightly beaten
  • 375.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 8 glacé cherries
  • 62.50 ml blanched almonds
  • 62.50 ml brandy
  • 170.00 gm sultanas
  • 250.00 ml dried figs, finely chopped
  • 125.00 ml dried pitted prunes, finely chopped
  • 125.00 ml currants
  • 125.00 ml dried cranberries
  • 2 tsp finely grated orange rind
  • 125.00 ml tawny fortified wine
  • 3.75 gm mixed spice
  • 1 cinnamon stick
  • 1 star anise
  • 118.80 gm dark brown sugar
Instructions:
  • Prepare the Cranberry and Fig Fruit Mince: Combine all ingredients in an airtight container. Mix well, cover tightly, and let it mature in a cool, dark place for a minimum of 1 week, remembering to stir every 2 days to enhance the flavors.
  • Preheat your oven to 150C/130C fan-forced. Prepare a 7cm-deep, 20cm round cake pan by greasing it and lining the base and sides with 1 layer of brown paper and 2 layers of baking paper, making sure to extend the paper 5cm above the edge of the pan.
  • In a large bowl, combine fruit mince, butter, and eggs. Remove star anise and cinnamon. Mix well. Gradually sift in flour and bicarbonate of soda, stirring until fully combined.
  • Spread the mixture evenly into the prepared pan and smooth the top with a spatula. Use the picture as a reference to beautifully arrange cherries and almonds on top of the cake.
  • Bake the cake for 2 hours, or until a skewer inserted in the center comes out clean. After removing from the oven, brush the hot cake with brandy, allow it to stand for 5 minutes. Fold parchment paper over the top of the cake, and carefully flip it, in the pan, onto a tray lined with baking paper. Cover with a tea towel and let cool in the pan overnight before serving.
