Impress this Christmas with our no-bake choc-mint Christmas tree cake, a delicious twist on traditional choc ripple cakes. Simply refrigerate overnight for a festive treat that's both stunning and easy to make.
Ingredients:
  • 2 x 600ml tubs thickened cream
  • 60g (1/3 cup) icing sugar mixture
  • 30.00 ml peppermint essence
  • Green liquid food colouring
  • 1 1/2 x 250g pkts choc ripple biscuits
  • 2 x 180g pkts M&Ms
  • 2 x 185g pkts minty crunchy milk chocolate balls
  • 35g bar Peppermint Crisp, cut into shards
  • Chocolate star, to decorate
Instructions:
  • With an electric mixer, blend cream and icing sugar until soft peaks form. Incorporate essence and mix well. Add green coloring and beat until reaching just-firm peaks.
  • Spread 1/2 cup of the cream mixture on a serving board to form a 20cm circle. Layer the biscuits on top, followed by a layer of cream mixture. Continue layering biscuits and cream, trimming as necessary to shape into a tree (approximately 11 layers of biscuits). Coat the sides of the tree with the remaining thick cream mixture. Chill overnight.
  • Separate the red M&M's from the rest (save the remaining M&M's for later). Decorate the tree with M&M's and chocolate balls following the provided picture as a guide. Sprinkle the base of the tree with Peppermint crisp. Finish by placing a star on top of the tree and serve right away.
