Indulgent Christmas ice cream cake with layers of vanilla and peppermint ice cream, chocolate mint balls, a ripple biscuit base, and topped with Darrell Lea Minty Crunchy Chocolate Balls.
Ingredients:
  • 2 x 185g pkts Minty Crunchy Chocolate Balls
  • 2L vanilla ice-cream
  • Green liquid food colouring, to tint
  • 1 tsp peppermint extract
  • 125g Choc Ripple biscuits
  • 40g butter, melted
  • 100g dark chocolate, chopped
  • 40.40 gm thickened cream
Instructions:
  • Prepare a loaf pan by greasing it and lining the base and sides with baking paper, making sure to extend the paper 2cm above the edge of the pan. Put the entire contents of one packet of chocolate balls in a sealable plastic bag, then crush them finely using a rolling pin.
  • In a large bowl, let half of the ice-cream sit at room temperature for 10 minutes to soften. Mix in half of the crushed chocolate balls using a spatula until well combined. Spread the ice-cream mixture evenly over the base of the prepared pan, then freeze for at least 30 minutes before serving.
  • In a large bowl, let the remaining ice-cream soften at room temperature for 10 minutes. Mix in green food coloring, peppermint extract, and the crushed chocolate balls. Fold everything together until well combined using a spatula. Spread this mixture over the vanilla ice-cream layer, ensuring a smooth surface. Freeze for a minimum of 30 minutes before serving.
  • In a food processor, finely chop the biscuits. Add butter and process until fully combined. Press the mixture over the green ice-cream layer. Freeze for 6 hours or overnight until set.
  • Combine the dark chocolate and cream in a microwave-safe bowl. Microwave on High, stirring halfway through, until melted and smooth, about 1 minute. Let cool for 15 minutes before using.
  • Invert cake onto a serving plate. Drizzle chocolate mixture over the cake, letting it cascade down the sides. Garnish with rows of the remaining chocolate balls. Enjoy right away.
