Indulge in a refreshing minty twist with this decadent chocolate peppermint brownie.
Ingredients:
  • 150g butter, chopped
  • 100g 70% mint dark chocolate, chopped
  • 220g brown sugar
  • 3 Free Range Eggs, lightly whisked
  • 100g plain flour
  • 25g cocoa powder
  • 120g icing sugar mixture
  • 20.60 gm milk
  • 1/4 tsp peppermint essence
  • 35g Peppermint Crisp chocolate bar, finely chopped
Instructions:
  • Preheat the oven to 190C. Line a 20cm square cake pan with baking paper, making sure to leave some extra paper hanging over the sides for easy removal later.
  • Combine butter and chocolate in a saucepan over gentle heat, stirring until velvety and fully mixed. Take off the heat, then blend in brown sugar. Let sit for 5 minutes to cool.
  • Mix the egg, flour, and cocoa powder together, then transfer the batter into the prepared pan. Bake in the oven for 25 minutes or until the surface feels firm. Allow it to cool completely in the pan before serving.
  • - Gently lift the brownie out of the pan. - Mix icing sugar, milk, and peppermint essence in a small bowl until smooth. - Drizzle the brownie generously with the delicious icing. - Sprinkle with Peppermint Crisp for a delightful finish. - Allow the brownie to set for 15 minutes. - Finally, slice into delectable pieces and enjoy!
