Delicious chocolate peppermint slice, perfect for sharing with loved ones.
Ingredients:
  • 200g good-quality dark chocolate, broken into pieces
  • 375.00 ml plain flour
  • 4.00 gm baking powder
  • 90.00 gm firmly-packed brown sugar
  • 150g butter, melted, cooled
  • 395g can sweetened condensed milk
  • 107.50 gm caster sugar
  • 40g butter
  • 1/2 tsp peppermint essence
  • green food colouring
Instructions:
  • Preheat the oven to 180°C. Grease an 18cm x 28cm slab pan that is 3cm deep and line it with baking paper as instructed in the note.
  • To create the base, gently sift the flour and baking powder into a bowl. Next, mix in the rich flavor of brown sugar. Incorporate the butter and blend until thoroughly mixed. Press the mixture into the pan using the back of a spoon. Bake until the base turns a delightful light golden color, usually around 10 to 15 minutes. Once ready, take it out of the oven and lower the temperature to 170°C.
  • Prepare the filling by gently heating condensed milk, caster sugar, and butter in a small saucepan until the butter and sugar have melted. Simmer on low heat for 10 minutes, then remove from heat and mix in peppermint essence and a touch of food coloring for a beautiful finish.
  • Spread the luscious filling evenly over the buttery base and bake until perfectly set, about 15 to 20 minutes. Let it cool completely before indulging.
  • In a microwave-safe bowl, heat chocolate on medium (50%) power for 2 to 3 minutes, stirring every minute with a metal spoon until almost melted. Stir until smooth. Spread the melted chocolate over the cooled slice. Let it set in the pan for 1 to 2 hours. Cut into pieces and enjoy!
