Indulge in our new Choc Mint Cheesecake Slice with Arnott's Mint Slice base, creamy peppermint cheesecake filling, and Cadbury Flake topping. No baking required, just 4 hours of chilling time for the perfect treat!
Ingredients:
  • 365g pkt Arnott’s Mint Slice biscuits
  • 60g butter, melted
  • 9.00 gm gelatine powder
  • 500g cream cheese, at room temperature
  • 140g (2/3 cup) caster sugar
  • 300ml tub thickened cream
  • 20.00 ml peppermint essence
  • Green food colouring, to tint
  • 24 treat-size Flake bars
Instructions:
  • Prepare a 16cm x 26cm slice pan by greasing it and lining the base and sides with baking paper, making sure the paper overhangs the long sides.
  • Spread 15 biscuits along the base of the pan. In a small food processor, finely crush the remaining biscuits. Add butter and blend until mixed. Spoon small dollops of the biscuit mixture into the pan to fill in gaps, then spread it evenly to cover the biscuits. Chill in the fridge until needed.
  • In a small heatproof bowl, combine 60ml (1/4 cup) water with gelatine, stirring until fully dissolved. Place the small bowl inside a larger one and pour boiling water into the larger bowl until it reaches halfway up the side of the smaller bowl. Let it sit, stirring occasionally, for 5 minutes until the gelatine dissolves completely.
  • In a large bowl, use electric beaters to blend cream cheese and sugar until smooth. Add cream and peppermint, beating until slightly thickened, and occasionally scraping down the sides of the bowl with a spatula. Mix in green food coloring. Slowly add gelatine mixture while beating constantly until just combined.
  • Pour the mixture evenly over the biscuit layer in the pan and gently smooth the top. Chill in the fridge for at least 4 hours until firm.
  • Split the Flake bars in half lengthwise and create a striking checkerboard design on top of the cheesecake. Slice and enjoy!
