Make a fun choc-mint Yule log with kids using Mini Cadbury Flakes for tree bark. Get creative with decorating!
Ingredients:
  • 100g (2/3 cup) self-raising flour
  • 20.00 gm cocoa powder
  • 3 eggs
  • 100g (1/2 cup) caster sugar, plus 1 tbsp extra
  • 400g ctn Creamy Delux Chocolate Frosting
  • treat-size Flake bars, sliced lengthways, to decorate
  • Spearmint Leaves, halved, to decorate
  • Red Chocolate M&Ms Minis, to decorate
  • Icing sugar, to dust
  • 200ml thickened cream
  • 12.00 gm icing sugar mixture
  • 1 tsp peppermint essence
  • Green liquid food colouring, to tint
Instructions:
  • Preheat your oven to 200C/180C fan forced. Grease a 25 x 30cm Swiss roll pan with oil and line it with baking paper, leaving an overhang on the two long sides for easy removal.
  • In a bowl, mix flour and cocoa together. In a separate bowl, beat the egg until pale and creamy using electric beaters for about 2 minutes. Gradually add sugar and beat for an additional 3 minutes. Sift the flour mixture over the egg mixture. Using a large metal spoon, gently fold the flour mixture into the egg mixture until just combined. Transfer the batter into the prepared pan and bake for around 10 minutes, or until the cake springs back when lightly touched in the center.
  • Place a clean tea towel on a work surface, with a sheet of baking paper on top. Sprinkle with the extra sugar. Flip the hot cake onto the sugar-covered paper, remove the base paper, and roll it up using the tea towel. Let it rest seam side down for 1 hour until completely cooled.
  • Whip the cream and icing sugar together until soft peaks form using electric beaters in a bowl. Mix in peppermint essence and 8-10 drops of food coloring until firm peaks form. Carefully unroll the sponge, spread the cream mixture evenly over it, and gently roll it up to seal in the filling.
  • Spread the frosting delicately on the cake, then adorn with Flakes, Spearmint Leaves, and M&Ms. Finish by dusting with icing sugar before serving.
