Choc-mint aero cheesecake slice recipe

Indulgent no-bake mint chocolate cheesecake slice with rich chocolate ganache. Perfect for a dreamy afternoon treat.
Ingredients:
  • 2 x 250g packet choc ripple biscuits
  • 250g unsalted butter, melted, plus extra 20g unsalted butter, chopped
  • 100g dark cooking chocolate
  • 7 x 40g packet Aero Peppermint bar
  • 12.00 gm gelatine powder
  • 40.00 gm boiling water
  • 2 x 250g packet cream cheese, at room temperature
  • 155g (3/4 cup) caster sugar
  • 250ml (1 cup) thickened cream
  • 2 tsp peppermint essence
  • Green liquid food colouring, to tint
  • 180g packet Minty Crunchy Chocolate Balls Milk Chocolate, crushed
  • Chocolate sauce, to serve
  • Fresh mint leaves, to decorate
  • 200g dark cooking chocolate, finely chopped
  • 40.40 gm thickened cream
  • 50g butter, chopped
Instructions:
  • Prepare a 22cm square cake pan by lining it with baking paper. Crush the biscuits in a food processor until finely crumbled. Mix in the melted butter until fully combined. Firmly press the mixture into the base of the pan evenly. Chill in the fridge for 10 minutes.
  • In a microwave-safe bowl, combine chocolate and extra butter. Microwave in 30-second intervals on High until melted and smooth. Spread over the biscuit base. Arrange Aero bars in rows on top and gently press into the chocolate. Chill in the fridge until needed.
  • Place the boiling water in a heatproof bowl and sprinkle gelatine over it. Set this bowl inside a larger heatproof bowl and fill the larger bowl with boiling water halfway up the side of the smaller bowl. Let it sit for 5 minutes, stirring occasionally until the gelatine dissolves. Allow it to cool for 1-2 minutes before using.
  • In a clean food processor, blend the cream cheese until smooth. Add sugar and cream, process until fully combined. Incorporate peppermint essence and 10 drops of food coloring, blend well. Slowly add the gelatine mixture and pulse to combine. Pour the mixture into a prepared pan and chill in the fridge for 4 hours until set.
  • To create the luscious chocolate topping, melt chocolate, cream, and butter together in a microwave-safe bowl. Heat on High, pausing to stir every 30 seconds, until the mixture is melted and silky. Pour the decadent mixture over the slice, ensuring a perfect smooth finish. Chill in the fridge for 30 minutes to achieve a firm set.
  • Cut the slice into squares, then generously drizzle with luscious chocolate sauce. Top with chocolate balls and fresh mint leaves for a delightful finish.
