Choc mint rocky road crackle cake recipe

Aussie-inspired no-bake dessert with crispy rice bubbles, mint slices, Aero mint, and rocky road flavors. Perfect for dinner parties and afternoon tea. Kids will love adding their favorite candies on top for a fun twist.
Ingredients:
  • 100g copha
  • 2 x 180g block white chocolate, chopped
  • 160g (4 1/2 cups) Rice Bubbles
  • 85g (1 cup) desiccated coconut
  • 20.00 gm cocoa powder, sifted
  • 5 Arnott’s Mint Slice biscuits, quartered
  • 2 x 40g Peppermint Aero bar, chopped
  • 8 white marshmallows, halved
  • 8 spearmint lollies, halved

  • 35g Peppermint Crisp bar, chopped, to decorate
Instructions:
  • Prepare a 7cm-deep, 10 x 20cm loaf pan by greasing it and lining the base and sides with baking paper, ensuring the paper extends 3cm above the edges on all sides.
  • In a large microwave-safe bowl, combine copha and 250g white chocolate. Microwave on Medium, uncovered, and stir every 30 seconds with a metal spoon for 1 to 2 minutes until melted and smooth. Mix in Rice Bubbles and desiccated coconut until fully combined.
  • Divide the mixture into 3 bowls. Stir in 1 tablespoon of cocoa into the first bowl until fully combined. Mix in the Mint Slice biscuits. Press the mixture firmly into the prepared pan. In the second bowl, add the Aero and stir well. Press the mixture over the chocolate layer. In the last bowl, mix in the remaining cocoa, marshmallows, and spearmint lollies. Spoon over the white layer and press firmly. Chill in the fridge for 1 hour until set.
  • Place the rest of the white chocolate in a microwave-safe bowl. Microwave on High for 1 minute, pausing to stir halfway through with a metal spoon, until it is melted and smooth. Let it sit for 5 minutes to cool slightly.
  • Serve by elegantly transferring the loaf onto a serving board, generously drizzle with chocolate, and artfully arrange mint slice, marshmallows, spearmint lollies, and peppermint crisp on top for a dazzling presentation. Allow it to stand for 15 minutes or until it sets. Then, slice and serve to enjoy.
