Decadent chocolate peppermint fudge bites await.
Ingredients:
  • 395g can sweetened condensed milk
  • 215.00 gm caster sugar
  • 55.60 gm glucose syrup
  • 125g butter, chopped
  • 4 drops green food colouring
  • 1 tsp peppermint essence
  • 180g block white chocolate, finely chopped
  • 50g dark chocolate, chopped
  • 4 small candy canes, chopped
Instructions:
  • Prepare a 20cm square cake pan with a 4cm depth by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • In a saucepan over low heat, combine condensed milk, sugar, syrup, and butter. Stir constantly for 10 minutes until the mixture is glossy and the sugar has dissolved.
  • Color the mixture green using food coloring. Mix in the essence. Raise the heat to medium-low and bring to a gentle simmer while stirring. Continue to cook, stirring constantly, for 6 to 8 minutes until the mixture thickens and pulls away from the side of the pan. Take off the heat and stir in white chocolate until fully melted. Transfer the mixture into the prepared pan and even out the top. Allow it to sit for 30 minutes, then cover with plastic wrap and refrigerate for at least 6 hours until set.
  • Cut shapes from the fudge using star cutters. Place dark chocolate in a microwave-safe bowl and microwave on medium-high (75%) for 1 minute, stirring every 30 seconds until smooth. Transfer the melted chocolate to a small snaplock bag, snip one corner off, and pipe a small round of chocolate onto each fudge piece. Garnish with a candy cane. Let sit for 1 hour to set before serving.
