Indulge in irresistible chocolate meringue bites for a decadent morning snack.
Ingredients:
  • 1 egg white
  • 53.75 gm caster sugar
  • 10.00 gm cocoa powder, sifted
  • Extra cocoa powder, to serve
  • 100g dark mint intense chocolate, chopped
  • 63.13 gm thickened cream
  • 1/2 tsp peppermint essence
Instructions:
  • - Preheat your oven to 150°C/130°C fan-forced and line 2 large baking trays with baking paper. - Use an electric mixer to whip the egg white into stiff peaks. - Gradually add sugar, one tablespoon at a time, beating well after each addition until the sugar has dissolved (about 2 minutes). - Mix in the cocoa until just combined.
  • Drop heaping spoonfuls of meringue onto lined trays to form 24 meringues. Use the back of a spoon to shape them into rounds. Bake for 20 minutes until set. Turn off the oven and allow them to cool with the door cracked open.
  • Prepare the choc-peppermint ganache by combining chocolate and cream in a heatproof, microwave-safe bowl. Heat in the microwave on medium power for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted and smooth. Mix in the essence and chill in the refrigerator for 20 minutes until thick and spreadable.
  • Assemble each meringue bite by layering 1 heaped teaspoon of ganache between 2 meringues. Repeat this step to create 12 meringue bites. Let them sit for 10 minutes to firm up. Present them with a sprinkle of cocoa powder on top before serving.
