Whip up a stunning Choc-peppermint slice for a delightful afternoon treat.
Ingredients:
  • 437.50 ml plain flour
  • 42.90 gm cocoa
  • 412.50 gm icing sugar mixture
  • 200g butter, melted, cooled
  • 41.20 gm milk
  • 160g copha
  • 1 1/2 tsp peppermint essence
  • Green food colouring
  • 300g Baking Dark Chocolate, chopped
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan, then line the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • In a large bowl, combine sifted flour, cocoa, and 1/2 cup of icing sugar. Mix in butter and press the mixture into the prepared pan. Bake for 15 minutes, then allow it to cool completely in the pan.
  • In a small saucepan over low heat, melt milk, 80g copha, and remaining 2 1/2 cups of icing sugar, stirring for 4 minutes until smooth. Add peppermint essence and green food coloring. Quickly pour the mixture over the base in the pan, spread evenly, and refrigerate until set, about 1 hour.
  • Melt chocolate and the remaining 80g of copha in a small saucepan over low heat, stirring constantly until smooth. Let it cool for 10 minutes before pouring evenly over the mint layer. Chill in the refrigerator for 3 hours or until set.
  • Let the dish rest at room temperature for 5 minutes to let the flavors settle before serving.
