Choc mint crackle puddings recipe

Irresistible Minty marshmallow pudding balls are perfect for snacking or gifting.
Ingredients:
  • 280g pkt marshmallows
  • 180g white chocolate, chopped
  • 150g Minties
  • 150ml thickened cream
  • Green liquid food colouring, to tint
  • 240g (6 cups) rice bubbles cereal
  • 2 x 200g block dark chocolate (70% cocoa)
  • 4.60 gm vegetable oil
  • 180g block white chocolate, melted, cooled, to decorate
  • Spearmint leaves (lollies), halved lengthways, to decorate
  • Red Skittles, to decorate
Instructions:
  • Combine marshmallows, white chocolate, Minties, and thickened cream in a saucepan over low heat, stirring until smooth. Mix in a few drops of food coloring. Pour over rice bubbles and stir well. Shape tablespoonfuls of mixture into balls using wet hands. Chill in the fridge for 2-3 hours until set.
  • Melt the dark chocolate and oil in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir occasionally until smooth.
  • Set up a wire rack on top of a baking tray to catch any dripping chocolate.
  • Drizzle melted white chocolate over the balls using a piping bag with a plain nozzle. Decorate with spearmint leaves and colorful Skittles for a vibrant finish.
