Basic leek & potato soup

Cozy up this season with a comforting bowl of soup.
Ingredients:
  • 25g butter
  • 2 leeks, thinly sliced
  • 500g sebago potatoes, peeled, coarsely chopped
  • 1L chicken style liquid stock
  • 126.25 gm thickened cream, plus extra for serving
  • Fresh chives, chopped
Instructions:
  • In a large saucepan, melt butter with olive oil over medium-high heat.
  • Sauté leeks until softened. Mix in potatoes and continue cooking, stirring frequently, for 5 more minutes.
  • Pour in the rich chicken stock and let the mixture simmer, partially covered, for 15 minutes until the potatoes are tender. Use a stick blender to puree until velvety smooth. Stir in a touch of cream and let it simmer for an additional 5 minutes until warmed through. Season to taste, then garnish with a generous sprinkle of fresh chopped chives. For an extra touch, gently swirl in some additional cream.
