Easy bacon and leek frittata recipe

Try this easy 5-ingredient bacon and leek frittata for a delicious meal that's as enjoyable to make as it is to eat.
Ingredients:
  • 6 rashers Short Cut Rindless Bacon, chopped
  • 1 leek, thinly sliced
  • 10 Free Range Eggs
  • 185ml thickened cream
  • 250g vine-ripened cherry tomatoes
Instructions:
  • Heat a greased 20cm (base measurement) ovenproof frying pan over medium heat. Add bacon and leek, stirring occasionally, for 5 minutes until bacon is browned and leek softens.
  • Preheat the grill on high. In a bowl, whisk together the eggs and cream. Pour the egg mixture over the bacon in the pan. Reduce the heat to low and cook for 7 minutes until the eggs are almost set. Finish by grilling for 5 minutes until golden and fully set.
  • On a lined baking tray, arrange the tomatoes and grill for 2 minutes until their skins split. Serve the frittata topped with the tomatoes, season to taste, and cut into wedges for serving.
