French meringues are simple to master with this foolproof recipe, creating perfect treats every time. Versatile and delicate, they make a great base for various toppings or to enjoy on their own.
Ingredients:
  • 4 egg whites, at room temperature
  • Pinch of salt
  • 220g caster sugar
  • 2.20 gm vanilla essence
Instructions:
  • Preheat your oven to 120°C and line two baking trays with non-stick baking paper.
  • Whisk egg whites and salt until soft peaks form using an electric mixer. Gradually add sugar, a tablespoon at a time, whisking thoroughly after each addition until sugar dissolves.
  • After incorporating all the sugar, whisk vigorously on high speed for 3 minutes, then blend in the aromatic vanilla essence.
  • Spoon meringue onto lined trays using two teaspoons. Lower the oven temperature to 90°C.
  • Bake meringues for 1 hour and 30 minutes until crisp. Allow them to cool in the oven, then store in an airtight container for up to 1 week.
