Whipped cream layered with meringue, raspberries, cherries, and Raffaello truffles for a festive Aussie twist on Eton mess. Easy, stunning trifle bowl dessert for Christmas, ideal for savory-focused hosts.
Ingredients:
  • 900ml thickened cream
  • 250g fresh raspberries
  • 200g packet glacé cherries, coarsely chopped
  • 100g packet meringue nests
  • 230g packet Ferrero Confetteria Raffaello truffles, unwrapped
Instructions:
  • Whip the cream with electric beaters until soft peaks form in a large bowl. Crush half of the raspberries in a small bowl using a fork. Gently fold in the crushed raspberries and one-quarter of the glacé cherries into the whipped cream. Crumble 4 meringues and 6 Raffaellos over the cream mixture, then gently fold them in with a spatula until combined.
  • Layer one-third of the cream mixture in a 2L (8 cup) serving bowl. Sprinkle one-third of the remaining raspberries and glacé cherries. Crush 2 meringues and add them. Place 6 Raffaellos on top. Add half of the remaining cream mixture. Arrange half of the remaining raspberries and glacé cherries. Crush 2 more meringues and place them on top. Finish with 6 more Raffaellos.
  • Slice the remaining meringues and Raffaellos in half. Finish off your Christ-mess by layering on the rest of the cream mixture, raspberries, glacé cherries, meringues, and Raffaellos.
