Ingredients:
  • 450g (3 cups) Bread & Pizza Plain Flour
  • 2 tsp (7g/1 sachet) dried yeast
  • Large pinch of caster sugar
  • 1.20 gm salt
  • 310ml (1 1/4 cups) warm water
  • 18.20 gm olive oil
  • Olive oil, for brushing
  • Polenta, to dust
Instructions:
  • In a bowl, mix flour, yeast, and sugar together. Then stir in salt. Create a well in the center and add water and oil. Stir until combined, then use your hands to form the dough.
  • Place the dough on a lightly floured surface and knead for 10 minutes until it is smooth and elastic. Then, brush a bowl with oil and add the dough, turning it to coat it evenly.
  • Place a damp tea towel over the dough and let it rest in a cozy spot for 30 minutes or until it doubles in size. Gently punch down the dough with your fist.
  • Knead the dough for 30 seconds or until it doubles in size. Divide the dough in half. Cover one portion with a damp tea towel. Roll out the other portion to a 30cm diameter.
  • Preheat your oven to 230ºC. Dust trays with polenta and gently press the dough so it creates a thicker edge when baked.
  • Press the base with your fingers, gently making indents while avoiding the edge to prevent rising in the center. Repeat with the remaining dough.
