Basil chilli chicken stir-fry recipe

Try our quick and flavorful basil chili chicken stir-fry for a delicious dinner in just 35 minutes.
Ingredients:
  • 42.00 gm salt-reduced soy sauce
  • 76.25 gm oyster sauce
  • 40.00 ml kecap manis
  • 14.40 gm honey
  • 36.80 gm vegetable oil
  • 150g snow peas, trimmed
  • 165.00 ml fresh Thai basil leaves
  • 2.00 long red chilli, thinly sliced
  • Steamed jasmine rice, to serve
  • 24.40 gm fish sauce
  • 2cm piece fresh ginger, peeled, finely grated
  • 3 garlic cloves, crushed
  • 500g chicken thigh fillets, cut into 3cm chunks
Instructions:
  • Prepare the Chilli Chicken Marinade by combining soy sauce, fish sauce, ginger, garlic, and chili in a sealable container. Add chicken, toss to coat, and refrigerate for 30 minutes if time allows.
  • In a small jug, mix together soy sauce, oyster sauce, kecap manis, honey, and 2 tablespoons of water until well combined.
  • Preheat a wok over medium-high heat, then add oil and swirl to coat. Stir-fry half of the marinated chicken for 5 minutes, then transfer to a plate. Repeat with the remaining chicken.
  • Add the chicken back to the wok along with the peas and sauce mixture. Stir-fry for 3 minutes until the peas are tender and the sauce thickens.
  • Mix in 1/2 cup of fresh basil into the chicken. Stir well to combine. Garnish with chili and the rest of the basil. Enjoy with a side of rice.
